Cachexit cancer diet – Hollandaise Sauce

Ingredients:

  • 2 tbsp vinegar
  • Fresh tarragon leaves
  • ½ tsp salt
  • 1 tbspn cold water
  • 4 egg yolks
  • 225 g butter at room termperature
  • 1 tbspn freshly squeezed lemon juice
  • 1 tbspn cream

Directions:

  1. Combine vinegar, salt in saucepan and bring to rapid boil
  2. Boil until mixture has reduced by half
  3. Add water and remove from heat
  4. Whisk the egg yolks together until light and fluffy
  5. Place the saucepan over a pot of boiling water or add mixture to double boiler
  6. Once sauce begins to thicken ad the butter small pieces at a time then add the lemon juice and finely shopped tarragon
  7. Keep warm until ready to serve
