Researchers know that green tea contains high amounts of  polyphenolic compounds called catechins. They wanted to see how these catechins improve endurance, metabolism and fat oxidation. To study this they measured how long a group of mice could swim, how much fat was oxidized during that period and how much fat was present in the blood stream after the exercise. They then fed the mice green tea and did the tests again. What they found was almost amazing:
